Jellifier
A jellifier is a substance, typically a food additive, that transforms a liquid into a gel-like or semi-solid state. This process, known as gelation, is achieved by the jellifier's ability to form a network structure within the liquid, trapping the liquid molecules and giving the mixture a cohesive, stable form. Jellifiers work through various mechanisms, including hydrogen bonding, cross-linking, or entanglement of their molecules. Their function is crucial in a variety of applications, most notably in food processing to produce products like jams, jellies, and desserts, however, they have applications outside of the food industry as well.
